How to make awesome brownies!...

Alongside my goal of getting in shape. One of my goals for 2013 was to learn to bake, as I am honestly a rubbish cook. Yes I am aware that this could impact on my fitness though this year though I do plan to take on the challenge to be a really good baker; bread, cakes, pastries... might even have a go at macaroons? Trying to tackle a few recipes a month.
At school I did do cooking classes, though the skills I learnt was with a 60yr old demon of a teacher guiding me through each task with the etiquette of Merry Berry. However now that I am living by myself and the fact that a Jamie Oliver cook book kinda scares me slightly, I haven’t baked for years however I am keen to have a go and learn a new skill.
My first challenge is to make brownies, here is the best recipe I found (I tried a few others and they came out dry and flat)

Preparation Time:15 minutes
Cooking Time:30 minutes

You will need
33 x 23 x 5-cm baking tray, lined with greaseproof paper
200g dark chocolate roughly chopped
175g unsalted butter
325g caster sugar
130g plain flour
3 eggs
icing sugar, to decorate

Method
Preheat the oven to 170°C/325°F/gas mark 3 and prepare the baking dish by rubbing butter around the dish and then adding a small coating of flour.

Put the chocolate and butter in a heatproof bowl over a saucepan of simmering water (I learnt that you do not let the base of the bowl touch the water). Leave until melted and smooth ( try not to eat it!). Remove from the heat. Add the sugar and stir until well incorporated. Add the flour and sift in and stir in until well incorporated. Finally, stir in the eggs and mix until thick and smooth.

Spoon the mixture into the prepared baking tray ( use a metal tin the square ones are great for brownie) and bake in the preheated oven for about 30 to 35 minutes, or until flaky on the top but still soft in the centre. Be careful not to overcook otherwise the edges will become hard and crunchy. Leave to cool completely before dusting with icing sugar, to decorate.
